Sweet Potato Casserole

Filling:

  • 2 large cans yams (sweet potatoes)

  • 2 eggs

  • 1/2 tsp vanilla

  • 6 - 7 oz. can evaporated milk

  • 1/2 stick butter (salted)

  • 1/2 cup sugar

Topping:

  • 1 cup brown sugar

  • 1/3 cup flour

  • 1/2 stick melted butter

  • 1 cup pecans

Instructions:

  1. Pre-heat oven to 350 degrees.

  2. Grease 9 x 13 glass baking dish.

  3. Drain cans of sweet potatoes, put in large bowl, beat with a hand mixer until smooth.

  4. Add remaining filling ingredients: eggs, cinnamon, vanilla, milk, butter and sugar in bowl with sweet potatoes. Continue mixing with hand mixer until smooth.

  5. Spread mixture into greased baking dish.

  6. Mix topping ingredients in a separate bowl and spread evenly over top.

  7. *If making in advance you can cover and refrigerate until baking

  8. Bake for 30-40 minutes at 350 degrees.
