Bruschetta Bites
Ingredients:
1 french baguette
1 package cherry or grape tomatoes
1/2 red onion
Large handful of fresh basil (1/3 cup)
1 Tbsp balsamic vinegar
2 Tbsp olive oil
2 Tbsp minced garlic
1/2 tsp salt
1/4 tsp pepper
1 tsp dried oregano
1/2 tsp garlic powder
Instructions:
Wash and dry tomatoes. Finely chop into tiny, bite-sized pieces. Put in a bowl with a sprinkle of salt and let sit for 25 minutes.
Preheat oven to 400 degrees.
Half onion, peel and finely chop one half. Chop fresh basil.
Drain tomatoes. Add minced garlic, red onions, basil, garlic powder, oregano, salt, and pepper. Stir, add olive oil and vinegar. Let sit at room temperature for 10 minutes.
Slice french bagette into 1/2 inch slices and place on a foil lined baking sheet. Brush both sides of bread with olive oil and bake at 400 degrees for 5 minutes. Flip and bake for 2-3 more minutes or until golden brown.
Top toasted baguette slices with tomato mixture and garnish with additional balsamic vinegar and fresh basil if desired.
**Make a balsamic glaze to top by combining 1/2 cup of balsamic vinegar and 3 Tbsp of brown sugar in a saucepan and bring to a boil. Then reduce to a simmer for 10 minutes stirring occasionally. Drizzle over bruschetta pieces and serve immediately.
