Rice Spinach Feta Bowl

Ingredients:

  • 1 pouch of microwave brown rice

  • Flat leaf spinach bag salad

  • cilantro

  • green onion

  • salt

  • pepper

  • garlic powder

  • onion powder

  • dill

  • crumbled feta cheese

  • olive oil

Instructions:

  1. Microwave rice according to instructions (usually have to break up rice with hands while pouch is closed, open slightly to vent, and microwave on high for 90 seconds.

  2. Tear stems off spinach and tear into small pieces.

  3. Pick cilantro leaves off stems, roughly chop.

  4. Slice green onion or cut with scissors.

  5. When rice is done empty into a bowl (I usually split mine and share with Matt or save for lunch the next day).

  6. Mix spinach pieces into rice and drizzle with olive oil. Season with salt, pepper, garlic powder, onion powder, and HEAVY hand it on the dill. Mix well.

  7. Top with cilantro, green onion, and feta.
