Bang Bang Shrimp Tacos
Ingredients:
1/2 bag of frozen medium cooked shrimp (I use this Aldi brand)
1/3 cup sweet chili sauce
1/2 cup mayonnaise
1 Tbsp Siracha
1 avocado
bag of salad mix with red cabbage
cilantro
green onions
corn tortillas
salt
pepper
garlic powder
olive oil
Instructions:
Thaw half of bag of shrimp in a bowl of cold water.
Preheat air-fryer (390 for 3 mins).
Slice avocado and leave in slices or chunk.
Remove cilantro leaves from stems and roughly chop.
Make sauce: mix mayo, siracha and sweet chili sauce in a bowl.
When shrimp is thawed (5-10 mins), pinch off tails, clean, and pat dry.
In SEPARATE bowl from sauce, add shrimp, salt, pepper, garlic powder, and 1 - 2 Tbsp of sauce. Mix to coat. Seasonings are all to taste, start small.
Line air fryer with foil and olive oil (I have a spray bottle for mine, but just enough to grease foil). Add shrimp, air fry at 390 for 4 mins, flip/shake and then air fry another 4 mins at 390. *If using a frying pan on the stove just pan fry shrimp over medium high heat until golden brown.
Lightly fry torillas by spraying with olive oil and pan frying for a few seconds on each side
To assemble tacos: salad mix + shrimp + avocado + cilantro + green onions + extra sauce from bowl.
